Doc-only bookkeeping PR — flips the two convoys that completed yesterday from their stale status: open/status: closing to status: closed, and records the PR list on each.

Per #126's paths-ignore on .convoys/**, this PR triggers zero GitHub Actions jobs (Vercel still builds — Vercel isn't on Actions billing). Free cleanup.
